Thai-Style Grilled Chicken (Gai yang)

Contributed by Rachel and Brendan (From Cooks Illustrated) I know everyone ran to their kitchens to try the Pad Thai recipe that we put into last year’s cookbook. So here’s a new recipe that you can use the big bottle of fish sauce for that’s been sitting in the door of your refrigerator… This is probably our favorite new recipe that we’ve discovered in the last year. This chicken is very flavorful and the two-level grill keeps it moist. The dipping sauce is sweet and spicy. We like to serve this with sides of plain white rice and fresh pineapple … Continue reading Thai-Style Grilled Chicken (Gai yang)

Contributed by Paula Wondering what to do with your leftover mashed potatoes? Al got this recipe from a woman he works with. Otherwise, it can turn out a bit too salty.** Place meat in a large Dutch oven … Continue reading Slow-Roasted Pork Tacos

Ham via the Slowcooker

Contributed by Annette This recipe is so easy and so delicious, but the best part is you throw it in the slowcooker and you have meat for supper! It is good with her potato recipe or Anita’s slowcooker ones. Ingredients: 1 Ham (they get a boneless ham from the locker plant in Richland Center) Dijon or Spicy Brown mustard (whichever you prefer) 1 large can of crushed pineapple Coat the ham with mustard. Place in slowcooker. Pour crushed pineapple over the top of the ham. Set on low setting for 6-8 hours. Continue reading Ham via the Slowcooker

Authentic 5-Spice Beef Tacos

Contributed by Paula We got this recipe from the cards that Dick’s Supermarket has available, so I don’t know how authentic it is, however, it is darn tasty! It has a little sweetness to it and a little kick, too. It’s a change of pace from the “normal” taco filling. We normally use whatever kind of onion we have on hand rather than the green onion. Ingredients: 1 lb ground beef 1 green onion, diced 1/2 tsp minced garlic 1/2 tsp minced jalapeno pepper 1 (8 oz) can tomato sauce 1 Tbsp brown sugar 1 tsp chili powder 1/2 tsp … Continue reading Authentic 5-Spice Beef Tacos
