Contributed by Matt & Jacki In tight financial times, this salad makes a frequent appearance on our dinner table. And, also, when times are not so tight. So easy. And tasty. And healthy. Ingredients: Lettuce of any kind (we love butter lettuce), ripped into desired size Canned kidney beans or chickpeas, drained/rinsed Feta, crumbled Sunflower seeds Black pepper, to taste Olive oil, drizzled Sea salt, to taste Fresh lemon juice from half a lemon Use amounts to your taste, lightly toss together. Broccoli Apple Salad

Contributed by Paula & Al I love sweet & savory together. This salad is exactly that. Use whatever apple & onion variety is your favorite. Ingredients: 4 cups small broccoli florets, diced 2 small gala apples, cored & diced 1 cup matchstick carrots, roughly chopped 1/2 cup golden raisins or dried cranberries 1/4 cup chopped red onion 1 cup walnuts Dressing: 3/4 cup plain Greek yogurt 1/3 cup Mayo 1 1/2 Tbsp apple cider vinegar 3 Tbsp honey Salt, to taste Mix all dressing ingredients together & chill until ready for it. Mom’s Coleslaw

Funny thing about this recipe… It’s called “Mom’s Coleslaw” and our mom is the one who submitted it but it isn’t a recipe she came up with or her mom, Grandma Zweifel. Rather, it’s a woman named Melinda Felty’s mom’s coleslaw. Phew! That’s a whole lotta moms. Grandma Jansen’s Potato Salad

Seafood Salad

Contributed by Anita Ingredients: 1 large box large shell noodles 1 package imitation crab meat, broken into pieces *save enough to decorate the top! 2 small cans shrimp, drained 1 cup Hellmann’s mayo 1 cup Ranch dressing 3-4 stalks green onion, thinly sliced (optional) 2-3 stalks celery, chopped Cherry tomatoes, cut in half, to taste *save enough to decorate the top! 1/2 – 1 tsp dillweed, to taste Cook and drain noodles, let cool.
