Wondering what to do with your leftover mashed potatoes? Al got this recipe from a woman he works with. This is the original recipe, however, you could use any kind of meat and vegetables. We often use it for leftover chicken and any kind of roast and just throw in some frozen mixed veggies.
Ingredients:
- 1 lb ground beef
- 1 can cream of mushroom or celery soup
- 1 can cream corn
- 1 onion
- 1/2 can water
- Mashed potatoes (can use leftovers or instant)
- 2 slices cheese
Preheat oven to 350. Brown ground beef and drain. Add soup, 1/2 can water, cream corn, and onion. Mix together. Pour into a greased casserole dish, top with mashed potatoes and cheese. Cover and bake for 45 minutes.
