One cool day in Colorado I needed comfort food & Mom’s pot roast was the only thing that would work. Such fond memories of this.
Ingredients:
- Beef chuck roast, whatever size you need to feed your clan
- 1 large onion, quartered or so
- Water or Stock
- Potatoes & Carrots, as many as you need to feed your clan
- Seasoned salt
Preheat oven to 250 degrees. The total cooking time is about 6 hours. Initially, only the roast & onion & a little water or stock go into the roasting pan.
3 hours until done, add the carrots & sprinkle with season salt. 2 hours until done, add the potatoes & sprinkle those with season salt.
Take a bite, close your eyes, and be transported back to the kitchen in the farm house…
