Spelt flour is similar to wheat & truer to its “original form,” so people tend to be less sensitive to it. I’m sure you could use AP flour in this as well, just add a little bit less initially.
Ingredients:
- 2 cups spelt flour
- 5 Tbsp butter, cold
- 1 Tbsp baking powder
- 1/4 tsp garlic powder
- 1 cup buttermilk
- 1/2 tsp salt
- 1 1/4 cup grated cheddar, or combo of cheddar & cooked chopped bacon
Don’t have buttermilk? Add 1 Tbsp vinegar with the milk.
Preheat oven to 425 degrees.
Combine flour, baking powder, garlic powder & salt. Cut in butter (I just use my fingers). Lightly mix in cheese (& bacon if using, highly recommended). Mix in buttermilk, just til wet. Drop on greased baking sheet. Bake for 12-14 minutes.
