According to Brendan’s Aunt Judy, this is the “real” Grandma Nielsen recipe. His Uncle Niels couldn’t figure out why Judy couldn’t make pie “as good as Mom’s” until one day Judy spotted Grandma Nielsen adding the entire can of pumpkin instead of the half a can the original recipe called for. Grandma commented that she added the whole can so none of the pumpkin would go to waste. Mom Riely’s Recipe- This is a Riely family favorite! Ingredients: 6-8 tart apples, peeled and sliced (i.e., Macintosh) 1 1/2 cup sugar 6 Tbsp flour 1 tsp salt 1 tsp cinnamon 1/2 tsp nutmeg Dash of ginger 1/2 cup light cream or half and half Frozen pie crust Place apples in an unbaked pie crust. PILE HIGH! Mix together sugar, flour, cream, salt, and spices. Pour mixture over apples. Sprinkle top with additional cinnamon. Cover with aluminum foil. Bake 1 hour at 375 degrees.
