Pumpkin Pie

According to Brendan’s Aunt Judy, this is the “real” Grandma Nielsen recipe. His Uncle Niels couldn’t figure out why Judy couldn’t make pie “as good as Mom’s” until one day Judy spotted Grandma Nielsen adding the entire can of pumpkin instead of the half a can the original recipe called for. Grandma commented that she added the whole can so none of the pumpkin would go to waste. Duh…

Ingredients:

  • 1 (29 oz) can pumpkin
  • 1 cup milk
  • 1 egg, beaten
  • 1/2 cup brown sugar
  • 2/3 cups white sugar
  • 2 tsp cornstarch
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 pie shell

Mix sugars and other dry ingredients together. Add egg, milk, and pumpkin to the mixture and pour into an unbaked pie shell. Bake at 500 degrees for 10 minutes. Then drop the temperature to 375 degrees for 1 hour or until a knife inserted near the center comes out clean.
