Nicki’s Favorite Pie Crust Cookies

This recipe makes me smile because it IS your grandma, Nicki. She used to take extra pie crust & make something similar to this. Only she just made it one big “cookie” that we all broke pieces off of. I’ve done the same thing with the boys & it’s one of their favorites too. ☺

Ingredients:

  • Chilled pie crust, rolled
  • 2-3 Tbsp butter, melted
  • 1/4 cup sugar
  • 2 Tbsp cinnamon

Preheat oven to 350 degrees. Prepare baking sheet with parchment paper.

Unroll dough onto a lightly floured surface. Cut shapes into dough using cookie cutters (or a pizza cutter, if you’re like me).

Brush butter over dough. Transfer dough to prepared baking sheet. Cookies do not expand, so not much room is needed between them.

Mix together cinnamon & sugar. Sprinkle mixture over dough.

Bake for 15-20 minutes or until dough is lightly browned. Transfer to wire rack and allow to cool.
