If you’re growing tired of using your ripe bananas for banana bread AND you don’t have the sour cream that Anita’s previous banana cake recipe calls for, give this recipe a try. We got it from Sam’s first daycare person, Patty, and I’m going to write it here exactly the way it’s written on her recipe card. Old School!
Preheat oven to 350 degrees. Grease a 9 x 13 pan.
Cream together 2 cups sugar & 1/2 cup butter. Add 3 eggs, 3-4 mashed bananas & 1 tsp vanilla. Add 2 cups flour, 1 tsp baking soda, & a pinch of salt.
Pour into the greased pan & bake for 25-35 minutes, or until a toothpick comes out clean.
Frosting: Blend together 1 pkg soft cream cheese, 1/2 cup butter, 2 tsp vanilla. Add, gradually, 4 cups powdered sugar. Top the cooled cake.
