Fresh Mango Salsa

Contributed by Rachel & Brendan Wow. Yum! If mango isn’t available, peaches fill in as a substitute with ease. Lovely on fish tacos or by the scoop with tortilla chips. Ingredients: 3 ripe mangos, diced            1 medium red bell pepper, chopped 1/2 cup red onion, chopped 1/4 cup packed fresh cilantro leaves, chopped 1 jalapeño, seeded & minced 1 large lime, juiced (about 1/4 cup lime juice) 1/8 -1/4 tsp salt, to taste In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro & jalapeño. Spinach Dip

Contributed by Paula & Al Another dip I can’t stay away from. Does that mean I have a thing for dips? Oh, well. Ingredients: 10 oz pkg frozen chopped spinach, thawed & drained 1 1/2 cup sour cream                                               1 cup mayo 1 pkg Knorr Vegetable Soup Mix               3 green onions, chopped 8 oz can water chestnuts, drained & chopped Stir all ingredients until well mixed. French Onion Dip

Contributed by Paula & Al I am a sucker for French onion dip & potato chips! This is easy to make & it’s delicious. If you use sour cream & it ends up getting a little thick, just thin it out with some milk. Ingredients: 2 cups sour cream or plain yogurt 3 Tbsp dried onions 1 tsp onion powder                                      1 tsp parsley flakes 1/2 tsp celery seed                                       3/4 tsp salt 1/8 tsp black pepper                                                Dash of Worcestershire      Stir ingredients together in a bowl.
