Barbecue Roasted Salmon

From Cooking Light Rae’s favorite salmon recipe!!!! Ingredients: 1/4 cup pineapple juice 2 Tbsp fresh lemon juice 4 (6 oz) salmon fillets 2 Tbsp brown sugar 4 tsp chili powder 2 tsp grated lemon rind 3/4 tsp ground cumin 1/2 tsp salt 1/4 tsp ground cinnamon Cooking spray Lemon slices (optional) Combine pineapple and lemon juices in a ziploc bag and add salmon. Seal and marinade in refrigerator for 1 hour, turning occasionally. Preheat oven to 400 degrees. Remove fish from bag and discard marinade. Salmon with Brown Sugar & Mustard Glaze

Contributed by Anita & Dave This is our favorite salmon recipe. You can use country Dijon if you prefer. Ingredients: 3 Tbsp light brown sugar 1 Tbsp honey 2 Tbsp butter 1/4 cup Dijon mustard 2 Tbsp soy sauce 2 Tbsp olive oil 1 Tbsp finely grated ginger Vegetable Oil Salt & fresh ground black pepper, to taste 8 salmon fillets, 6 oz each Melt the brown sugar, honey & butter in a small saute pan over medium-high heat.
