Top Secret Recipes version of Mrs. Fields’ Snickerdoodles

Quite possibly one of the best cookies EVER! We misplaced this recipe for a while and were kicking ourselves for not getting it immortalized in the family cookbook. We were very happy when we recently came across it and we’re not about to let it get lost again! So here ya go!

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 1/2 cup flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp cream of tartar (or 1/2 tsp lemon juice)

Topping:

  • 2 Tbsp granulated sugar
  • 1 tsp cinnamon

In a large bowl, cream together the butter and sugars with an electric mixer on high speed. Add the egg and vanilla and beat until smooth. In another bowl, combine the flour, salt, baking soda, and cream of tartar (if using). Pour the dry ingredients into the wet ingredients and mix well. Add lemon juice during this step if substituting for cream of tartar. Preheat oven to 300 degrees while you let the dough rest for 30-60 minutes in the refrigerator.

In a small bowl, combine the topping ingredients. Take about 2 1/2 Tbsp of dough and roll it into a ball. Roll this dough in the cinnamon sugar mixture and press it onto an ungreased cookie sheet. Repeat for the remaining cookies. Bake the cookies for 12-14 minutes and NO MORE. The cookies may seem undercooked, but will continue to develop after they are removed from the oven. When the cookies have cooled they should be soft and chewy in the middle. Makes 16-18 cookies.

Note: Added the lemon juice substitute for cream of tartar, as we prefer it and have found the cookies are more chewy and less flat compared to cream of tartar.
