Ingredients:
- 1/2 cup rice (Carolina)
- 1 cup boiling water
- 1 quart whole milk
- 1/2 cup sugar
- 1/2 stick butter
- 3 eggs
- 1/2 tsp vanilla
- 1/2 cup water (soaked 1 hr in cold water)
Add rice to boiling water; soak 7 minutes. Add milk, sugar, and butter and bring to a boil. Simmer 45 minutes to 1 hour. Turn off heat. Beat eggs and vanilla in a separate bowl. Slowly add to cooked rice. Drain and add raisins.
Pour mixture into a baking dish. Sprinkle with sugar and cinnamon and a few dabs of butter. Place under broiler to brown sugar and cinnamon.
