Molasses Spice Cookies

We all know how delicious these are!

Ingredients:

  • 2 1/2 cups AP flour
  • 1 3/4 tsp baking soda
  • 2 tsp ground ginger
  • 1 heaping tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup brown sugar
  • 1 1/2 sticks (12 Tbsp) unsalted butter, softened
  • 1/2 cup molasses (not blackstrap)
  • 1 large egg
  • Granulated sugar, for rolling

Whisk together flour, baking soda, spices & salt. In another bowl, beat butter, sugar & molasses. Add the egg, beat 1 minute more. Blend in flour mixture until you have soft dough.

Divide dough in half; wrap & freeze for 30 minutes. Shape teaspoonfuls into balls; roll in sugar. Place 2 inches apart on a parchment-lined baking sheet.

Bake at 350 degrees for 9-11 minutes, until flattened & crackle-topped.  Cool before eating… if you have any will power at all.
