We were a little skeptical about peanut butter with salsa, but it REALLY tastes good! It’s also very quick, which is a plus.
Ingredients:
- 1 lb boneless, skinless chicken breast
- Non-stick spray
- 1 medium green bell pepper (or sweet red pepper)
- 1/2 cup salsa
- 1 Tbsp peanut butter
- 1 Tbsp light soy sauce
- 1 tsp finely shredded ginger root
- 1 tsp minced garlic
- 1/4 cup coarsely chopped, unsalted peanuts
- Cooked white rice
Rinse chicken and pat dry. Cut into bite-size pieces. Spray large skillet with cooking spray. Place over medium high heat. Add chicken and pepper to hot skillet. Cook 5 minutes or until totally cooked. Stir in remaining ingredients except chopped peanuts. Cook and stir until thick and bubbly (about 3 minutes). Serve over rice and top with chopped peanuts.
