Meatball Stroganoff

We copied this one off of the Food Network. MMMMMMMMM!

Ingredients:

  • 2 cloves garlic
  • 1 lb. ground chuck
  • 2 egg yolks
  • 3/4 cup onion, divided
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup fresh breadcrumbs (can make by putting bread in the blender!)
  • 1-2 cups sliced mushrooms
  • 1/4 cup sherry
  • 2 cups chicken or beef broth
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp butter, softened
  • 2 Tbsp flour
  • 1/4 cup sour cream

Mix garlic, ground chuck, egg, 1/4 cup onion, salt, pepper, and breadcrumbs; form 1- to 1.5-inch meatballs. Brown them in hot oil and remove them from the pan (DON’T cook them completely).

Saute mushrooms and remaining onions in pan with beef drippings and left over oil. Add sherry, broth, and Worcestershire sauce. Scrape up bits of meat and vegetables that are stuck to the bottom of the pan. Add meatballs to finish cooking (about 10 minutes). Knead together butter and flour. Add these to the pan to thicken the sauce. Add the sour cream and stir.

Serve this dish over/with a side of spatzle. Or, if you’re running short on time, you can also put it over egg noodles.
